"Arroz a la Valenciana is a style of paella that I fell in love with when I first visited Nicaragua. To tell you it has ketchup or tomato sauce would be weird and off putting but its the dish of my childhood and it reminds me of happiness and fun and family. I havent had it again since becoming vegetarian but Chef Adriana did me a solid and made it with only veggies. It was just as I expected. I had it with some sliced bread and I was immediately transported back to a better place."
